This is in reality, just a Red Velvet Cake. The "rock" is from the addition of Maraschino Cherries into the batter to give it something extra. We used Red Velved Cupcake mix as it includes both the batter and frosting for a few pennies less than if you were to buy the frosting separately.
Like most of our campground cooking, we cooked this cake in a Dutch Oven. The result is a very moist - almost "jello" like consistency. The moist result is due to the "drip tips" in the top of the Dutch Oven.
Remember that when you are camping, you are on vacation. All of you. So guys, give your wife a break and you do the cooking on your next camping trip.
Simply mix the cake according to directions - but then add a few Maraschino Cherries into the mix. Try to spread the cherries out a bit so they don't all clump in the center.With parchment paper, fill the mixture into a Dutch Oven and bake for 20 minutes at 350 deg or until done. If you are cooking over a campfire, monitor the mixture with a toothpick or similar until done. When you can poke a toothpick into the cake and no batter sticks to it - it's done. Note that with the addition of the cherries, it might take a bit longer to cook.
Frost the cake with the frosting from the package and throw a few Cherries on the top as well.
